Hearty Chicken Stew
3 skinless boneless organic chicken breasts (cut into 1 inch pieces)
4 skinless boneless organic chicken thighs (cut into 1 inch pieces)
3 large red onion
10 celery stalks (chopped)
10 carrots (cut into 1 inch pieces)
3 zucchini (cut into half moons)
8 fresh sage leaves (minced)
2 fresh rosemary stems (slide rosemary off stems and mince)
4 quarts organic chicken stock
2 tablespoons organic ghee
1 whole lemon (stems removed and chopped finely)
1 jar of organic tomato paste
1 tablespoon cayenne (add more to taste)
1 tablespoon pink salt (add more to taste)
Place all ingredients into large pot and bring to gentle boil, then cover and simmer on low for 90 minutes.
Store in refrigerator in glass ball jar for up to 5 days.
